Osteria Giorgione da Masa, in Venice, is definitely the best Japanese restaurant I’ve been in outside of Japan. You won’t find sushi here, but a wonderful display of fermented and marinated pickles, veggies and fish.

Some of the delicacies pictured: crudo di ricciola affumicata, gamberi con yuzukoshō, calamari okizuke marinated in sake and soy, daikon, bergamot and shiso everywhere, nitamago, aquarelle nanbanzuke, musoshiru, chāsū, agedashi nasu, udon mentsuyu, katsuobushi.

Wines: glera and garganega from Veneto, natural style, and a moscato di Calabria to top it up.
